We are North Carolina Mountain Mushroom Cooperative, NCMMC. A MadisonCounty based cooperative that is focused
on helping local farmers find customers in the local area. We supply gourmet
mushrooms to the Asheville
area. Our main product is locally grown shiitake. While we are not yet certified
organic, nearly all of the shiitake produced are grown organically.
Our
shiitake are grown on hardwood logs, primarily oak. These logs are inoculated
with certified organic spawn and the inoculation holes are covered with organic
food grade cheese wax. One year later the mushrooms begin to grow. This is the
traditional method of growing shiitake and results in a superior mushroom with
a beautiful color and delicious flavor.
Don’t
confuse our outdoor, log-grown shiitake with those produced indoors on sawdust.
The indoor variety are considerably smaller, lack vibrant colors, have a lesser
flavor and much shorter shelf-life when compared to log-grown shiitake, and the
nutritional content is also inferior. Outdoor grown shiitake have a
considerably higher Vitamin D content plus a higher percentage of Lentinan, the
main medicinal component of shiitake.
Our
prices are very competitive and we stand behind our product. It is in our
interest to serve to you the highest quality for you dollar. If you are not
satisfied with the quality of the mushrooms, contact us and we will make it
right.
Our
mushrooms come in increments of 5 pounds, packaged properly in waxed ½ bushel
boxes. Our minimum order is 5 pounds but our discounts start at 10 pounds. We
have 3 grades of mushrooms to choose from to best serve your needs.
Grade A -- Donko - $14 per pound. The very best there is. The gills
are still covered by the veil.
Grade B – Doko - $9 per pound.Grocery grade. A beautiful mushroom with the margin pointed down.
Grade
C -– Koko - $8 per pound. Restaurant
grade. Tastes great, but may be a little misshapen.
For order less than 10 pounds per delivery add an additional $1 per
pound.
For
orders over 50 pounds per delivery reduce the price by 20%.
In
addition to fresh shiitake, we also offer dried shiitake and shiitake flour. Please
call for details and prices. We also offer oyster mushrooms and wine-cap
mushrooms at $10 per pound, no minimum.
*Our
mushrooms season starts April 1st and ends November 1st. Our
delivery day is Thursday. Our supplies are limited, and tend to slightly
fluctuate weekly. We do not guarantee last minute orders. Weekly customers get
priority. Save 50 cents per pound if you recycle your box.
