For many people, fungus isn't high on their list of preferred foods. After all, fungus is something you have to scrape off the walls in your condos in downtown Toronto before you sell it, right? Not quite! Mushrooms fall into the fungus family, and they can be both nutritious and delicious. In fact, some of our favorite recipes call for mushrooms. Cream of Mushroom Soup
2 tsp olive oil
1 chopped onion
6 cups white mushrooms
6 minced garlic cloves
1 tsp thyme
1 tsp salt
1 tsp pepper
1 cup flour
6 cups chicken or vegetable stock
1 tbsp lemon juice
1 cup cream
1 tbsp chives (optional)
In a pot over medium heat, cook onions, mushrooms, garlic, thyme, salt and pepper in oil until liquid is evaporated. Add flour and stir for 1 minute. Stir in stock and lemon juice then reduce heat and simmer for 10 mins. Stir in cream and sprinkle with chives if desired. Serve!
This dish is a perfect appetizer that can be served by a wedding caterer in Toronto as a vegetarian or non vegetarian option. You can also make a large batch and freeze it so that you can break it out when company comes. It's also great in a thermos to take for your lunch at work or school.
Stuffed Mushrooms
12 whole mushrooms (large)
1 tbsp vegetable oil
1 tbsp minced garlic
1 pkg cream cheese (softened)
1 cup grated Parmesan
1 tsp pepper
1 tsp onion powder
1 tsp cayenne powder
Heat oven to 375 degrees and spray a baking sheet with non stick spray. Wash and dry your mushrooms and break off the stems. Chop up the stems and cook with garlic and oil in a frying pan over medium heat until moisture is gone. Cool. Stir in cream cheese, Parmesan, pepper, onion powder, and cayenne. Use your plastic tubing cutters to hollow the mushroom caps. Spoon the thick mixture into the mushroom caps. Place caps on baking sheet and cook in oven for 20 minutes.
