This is our highest quality Shiitake. It is referred to as "Donko". The mushroom is immature and usually about the size of a golf ball. The cap has not expanded from the stem and the veil is still intact. The stem is whole.
This is the typical Shiitake, the cap has expanded form the stem and the veil is broken. The margin of the cap is still in-rolled (facing the stem). The stem is cut to radius of the cap.
This style is a whole Shiitake which may be a different stages of maturation. Typically the cap is nearly flat, the stem whole and the gulls may or may not be a slightly bruised. This is the most economical choice for restaurant who generally choose to chop the shiitake into small pieces.
This is made from dried shiitake. It goes great in breads, soup, meats and stir-fry. It is the most affordable way to provide the nutritional benefits and flavor of shiitake.
